🥚🔥🥦
Geitenkaas1 servings15 minutes±230 kcal
Ingredients
- —80–100 g vegetables of your choice (e.g., spinach, leek, or zucchini)
- —75 g soft goat cheese
- —1 tbsp water (strict phase) or 1 tsp olive oil (fat phase)
- —Pepper and fresh herbs (chives, dill, or parsley)
- —1 or 2 pieces of Leksands crispbread
Instructions
For mornings when you’re craving something savory and warm. The vegetables are lightly steamed or sautéed with a bit of water, and the goat cheese melts gently over them — perfect paired with a crunchy Leksands cracker.
Heat water (or olive oil) in a pan and add the vegetables.
Cook for 3–4 minutes until tender-crisp.
Spread the goat cheese over the vegetables and let it melt briefly (turn off the heat).
Season with pepper and herbs.
Serve with the Leksands cracker on the side.
Serving Tip
Enjoy the warm vegetables and melted cheese with pieces of crispbread — it’s like mini “vegetable toast,” but MB-friendly. Delicious with a cup of coffee or ginger tea in the morning.
Storage Tip
Allow the vegetables with melted cheese to cool to lukewarm first to avoid condensation in your container. Store in an airtight container in the fridge for up to 1 day. Keep the Leksands crispbread separate to maintain its crunch — only add it when ready to eat. Let the dish come to room temperature or warm it briefly in a pan or microwave (without the crispbread). 💡 Also tasty as a cold lunch: the goat cheese becomes firm and creamy, almost like a vegetable-cheese salad with a crunchy cracker on the side.
