Mini Zucchini and Tomato Pizzas

Ingredients

  • 1 zucchini
  • 1 tomato
  • grated cheese
  • pepper
  • salt

Instructions

  • Preheat the oven to 200 °C (390 °F).

  • Slice the zucchini into even rounds.

  • Slice the tomato into rounds as well.

  • Place the zucchini slices on a baking sheet lined with parchment paper.

  • Top each zucchini slice with a slice of tomato.

  • Season lightly with pepper and salt.

  • Sprinkle with grated cheese.

  • Bake for 8 to 10 minutes until the cheese is nicely melted and lightly golden.

Simple, light, and surprisingly delicious. These little oven bites show how little you need to create something warm and satisfying. These mini pizzas are delightful straight from the oven and make a great light appetizer or quick veggie snack.

Storage Tip
