Dairy-Free Almond Pancakes

Ingredients

  • 2 eggs
  • 3 tbsp almond flour (± 30 g)
  • 80 ml water or unsweetened almond drink
  • ½ tsp baking powder (optional, for fluffiness)
  • Pinch of cinnamon or vanilla powder
  • 1 tsp olive oil or coconut oil for frying
  • (Optional) apple slices or berries as topping

Instructions

Preparation

  • Whisk the eggs in a bowl.

  • Add almond flour, baking powder, cinnamon, and water; mix until smooth.

  • Heat a drop of oil in a frying pan over medium heat.

  • Pour small portions of batter into the pan and cook the pancakes for ± 2 minutes per side until golden brown.

  • Serve immediately with fruit or a sprinkle of cinnamon.

Air Fryer: – Preheat to 180 °C – Pour small portions of batter into heatproof molds, bake for 8–10 minutes

Serving Tip

Light, soft, and delightfully nutty – perfect for breakfast. 🥄 Serving Tip Stack 3–4 small pancakes on a white plate. Top with fresh berries, thin apple slices, and a sprinkle of cinnamon.

Storage Tip

Store for up to 1 day in the fridge, covered. Reheat in a dry frying pan or for 2 minutes in the air fryer at 160 °C.
