Ingredients

  • 150 g fresh salmon, thinly sliced
  • 1 avocado, sliced
  • Lemon zest
  • Salt and pepper
  • Splash of light soy sauce
  • Option 1 – Sushi rice: 250 g cooked sushi rice
  • Option 2 – Quinoa: 200 g cooked quinoa + 1 tablespoon cornstarch
  • Option 3 – Polenta: 250 g firm cooked polenta
  • Option 4 – Cauliflower base: 200 g finely ground cauliflower rice + 1 egg + 1 tablespoon arrowroot
  • Olive oil

Instructions

These festive salmon bites are perfect for New Year's Eve: crispy, creamy, and luxurious all at once. The soft salmon and avocado create a beautiful contrast with the crunchy base — whether you opt for classic sushi rice, crispy polenta, or a light quinoa base. Ideal as small bites to start the new year in style.

  • Choose a base. For sushi rice: press the rice firmly into a mold, let it set, cut into cubes, and fry until golden brown. For quinoa: mix with cornstarch, press into a mold, let it set, and fry until crispy.

  • For polenta: let it firm up, cut into cubes, and fry until crispy.

  • For cauliflower base: mix cauliflower with egg and arrowroot, shape into small cubes, and fry until firm and golden brown.

  • Slice the salmon thinly and season with lemon zest, salt, pepper, and optionally a bit of soy sauce.

  • Slice the avocado.

  • Place the salmon and avocado on each crispy cube. Serve immediately as festive New Year's Eve bites.
