Yogurt with Apple and Seeds

Ingredients

  • 150 g full-fat yogurt (goat, sheep, or soy yogurt)
  • ½ apple, diced
  • 1 tbsp pumpkin seeds
  • 1 tsp lemon juice
  • pinch of cinnamon
  • optional: some sunflower seeds or flaxseed oil (½ tsp)

Instructions

A fresh, simple breakfast that's perfectly balanced: creamy yogurt, crunchy apple, and toasted seeds for texture. Ideal as a light start to the day, packed with protein and healthy fats. Toast the seeds briefly in a dry pan until fragrant. Mix the yogurt with lemon juice and cinnamon in a bowl. Add the diced apple and stir well. Sprinkle the warm seeds on top and serve immediately.

Serving Tip

Perfect as a “grab & go” breakfast: mix everything in a sealable container and take it cold — just stir on the go, and it's ready.

Storage Tip

Preparation: You can mix the yogurt, cinnamon, and lemon juice the night before. Apple: Dice it in the morning, or mix it immediately with lemon juice to prevent browning. Seeds: Store toasted seeds separately in an airtight jar to keep them crunchy. Refrigeration: Store the assembled dish in the fridge (covered) for up to 1 day.
