Yogurt-Spiced Salmon with Tomato & Onion

Ingredients

  • 150g salmon fillet, cut into large chunks
  • 2 tablespoons yogurt (full-fat, goat, or sheep yogurt)
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon mild harissa (very thin)
  • 1 teaspoon lemon zest
  • 4 cherry or Roma tomatoes, sliced
  • 1/4 red onion, thinly sliced
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 200°C (400°F) and line a small baking tray with parchment paper.

  • Mix the yogurt with turmeric, paprika, harissa, lemon zest, pepper, and a pinch of salt.

  • Toss the salmon chunks in the yogurt marinade until lightly and evenly coated.

  • Place the salmon pieces on the baking tray and roast for 10–12 minutes until tender and golden at the edges.

  • Serve the salmon on a bed of yogurt with the tomato and onion playfully arranged around it.

Serving Tip

Place the salmon on a generous spoonful of yogurt and scatter the tomato and onion around it. It looks like you spent hours cooking, but no one needs to know.

Storage Tip

Best enjoyed straight from the oven; also delicious cold as a to-go option.
