Winter Salad with Blood Orange, Mango, and Burrata

Ingredients

  • 3 oranges (preferably a mix of regular and blood oranges), sliced
  • 1 ripe mango, cut into pieces
  • 1 red onion, thinly sliced
  • 200 g burrata
  • Handful of basil leaves
  • 2 tablespoons extra virgin olive oil
  • Juice of 1/2 lemon
  • 1 tablespoon red wine vinegar
  • 1.5 teaspoons honey
  • Salt
  • Black pepper

Instructions

  • Cut off the top and bottom of the oranges and remove the peel with a sharp knife. Slice into thin rounds.

  • Peel the mango and cut the flesh into even pieces.

  • Thinly slice the red onion into rings.

  • Arrange the orange, mango, and onion on a platter.

  • Whisk together olive oil, lemon juice, red wine vinegar, honey, salt, and plenty of black pepper to make a dressing.

  • Break the burrata into pieces and scatter over the salad.

  • Add the basil leaves and drizzle with the dressing.
