
Winter Salad with Blood Orange, Mango, and Burrata
Ingredients
- —3 oranges (preferably a mix of regular and blood oranges), sliced
- —1 ripe mango, cut into pieces
- —1 red onion, thinly sliced
- —200 g burrata
- —Handful of basil leaves
- —2 tablespoons extra virgin olive oil
- —Juice of 1/2 lemon
- —1 tablespoon red wine vinegar
- —1.5 teaspoons honey
- —Salt
- —Black pepper
Instructions
Cut off the top and bottom of the oranges and remove the peel with a sharp knife. Slice into thin rounds.
Peel the mango and cut the flesh into even pieces.
Thinly slice the red onion into rings.
Arrange the orange, mango, and onion on a platter.
Whisk together olive oil, lemon juice, red wine vinegar, honey, salt, and plenty of black pepper to make a dressing.
Break the burrata into pieces and scatter over the salad.
Add the basil leaves and drizzle with the dressing.
