Warm White Cabbage Salad with Lemon and Herbs

Ingredients
- —300 g white cabbage, finely shredded
- —1 small red onion, thinly sliced
- —1 tablespoon olive oil
- —1 teaspoon lemon zest
- —1 tablespoon lemon juice
- —1 tablespoon fresh parsley or dill, finely chopped
- —1 Leksands crispbread cracker, crumbled
- —Pepper and sea salt to taste
Instructions
Heat the olive oil in a large pan over medium heat.
Add the white cabbage and onion, and sauté for 3–4 minutes until the cabbage softens slightly but remains crisp.
Remove from heat and mix in the lemon zest, lemon juice, pepper, and salt.
Transfer the salad to a serving dish. Sprinkle with fresh herbs and the crunchy crispbread crumbs.
Serve warm.

Serve the cabbage in a wide dish to showcase the warm lemon oil and crispbread crumbs. Soft, fresh, and crunchy — white cabbage at its lightest.
