Warm White Cabbage Salad with Lemon and Herbs

Ingredients

  • —300 g white cabbage, finely shredded
  • —1 small red onion, thinly sliced
  • —1 tablespoon olive oil
  • —1 teaspoon lemon zest
  • —1 tablespoon lemon juice
  • —1 tablespoon fresh parsley or dill, finely chopped
  • —1 Leksands crispbread cracker, crumbled
  • —Pepper and sea salt to taste

Instructions

  • Heat the olive oil in a large pan over medium heat.

  • Add the white cabbage and onion, and sauté for 3–4 minutes until the cabbage softens slightly but remains crisp.

  • Remove from heat and mix in the lemon zest, lemon juice, pepper, and salt.

  • Transfer the salad to a serving dish. Sprinkle with fresh herbs and the crunchy crispbread crumbs.

  • Serve warm.

Serving Tip

Serve the cabbage in a wide dish to showcase the warm lemon oil and crispbread crumbs. Soft, fresh, and crunchy — white cabbage at its lightest.

Storage Tip

Keeps for up to 2 days in the fridge; add crispbread crumbs just before serving.
