
Ingredients
- —80–100 g fresh spinach
- —1 egg
- —1 tsp olive oil or ghee
- —splash of lemon juice
- —pinch of nutmeg or curry powder
- —pepper and optionally a pinch of sea salt
- —1 piece of Leksands crispbread (rye, extra crispy)
Instructions
Heat either water (strict phase) or olive oil/ghee (fat phase) in a frying pan.
Add the spinach and let it wilt briefly.
Crack the egg over the spinach and stir gently until set.
Season with lemon juice, nutmeg, and pepper.
Serve with the crispbread on the side for a light, crunchy bite.
Serving Tip
Enjoy the bowl warm, straight from the pan. A splash of lemon juice or some fresh herbs adds a refreshing touch. In the fat phase, drizzle a drop of olive oil on top for extra creaminess.
