Warm Spinach and Chickpea Breakfast Bowl

Ingredients

  • —150g spinach, roughly chopped
  • —80g cooked chickpeas, mashed
  • —1 small shallot, finely chopped
  • —1 teaspoon lemon zest
  • —Salt and pepper to taste
  • —Splash of water for cooking

Instructions

  • Heat a pan over medium heat with a splash of water.

  • Add the shallot and sauté for 1–2 minutes until softened.

  • Add the mashed chickpeas and warm through for 1 minute.

  • Stir in the spinach and cook until just wilted.

  • Season with lemon zest, salt, and pepper.

  • Let it simmer gently for 1 more minute until everything is warm and creamy.

  • Serve immediately in a bowl.

Serving Tip

Delicious with a sprinkle of extra lemon zest on top.
