Ingredients
- —150g spinach, roughly chopped
- —80g cooked chickpeas, mashed
- —1 small shallot, finely chopped
- —1 teaspoon lemon zest
- —Salt and pepper to taste
- —Splash of water for cooking
Instructions
Heat a pan over medium heat with a splash of water.
Add the shallot and sauté for 1–2 minutes until softened.
Add the mashed chickpeas and warm through for 1 minute.
Stir in the spinach and cook until just wilted.
Season with lemon zest, salt, and pepper.
Let it simmer gently for 1 more minute until everything is warm and creamy.
Serve immediately in a bowl.
