Warm Shiitake & Leek Dish

Ingredients

  • 200g shiitake mushrooms, sliced or quartered
  • 120g leek, thinly sliced
  • 1 small red onion or shallot, finely chopped
  • 1 clove of garlic, minced
  • 1 teaspoon thyme or rosemary
  • Salt and pepper to taste
  • Splash of water for cooking

Instructions

  • Heat a pan over medium heat with a splash of water.

  • Add the onion and cook for 2 minutes until softened.

  • Add the shiitake mushrooms and cook for 5–6 minutes until they release their aroma and moisture.

  • Add the leek and garlic, stirring everything well.

  • Season with thyme or rosemary, salt, and pepper.

  • Let it simmer gently for another 4–5 minutes until everything is warm and fragrant.

  • Serve immediately, nice and hot.

Serving Tip

Add a touch of lemon zest just before serving for extra freshness.

Storage Tip

Keeps for up to 1 day in the fridge, best enjoyed warm.
