
Ingredients
- —200g shiitake mushrooms, sliced or quartered
- —120g leek, thinly sliced
- —1 small red onion or shallot, finely chopped
- —1 clove of garlic, minced
- —1 teaspoon thyme or rosemary
- —Salt and pepper to taste
- —Splash of water for cooking
Instructions
Heat a pan over medium heat with a splash of water.
Add the onion and cook for 2 minutes until softened.
Add the shiitake mushrooms and cook for 5–6 minutes until they release their aroma and moisture.
Add the leek and garlic, stirring everything well.
Season with thyme or rosemary, salt, and pepper.
Let it simmer gently for another 4–5 minutes until everything is warm and fragrant.
Serve immediately, nice and hot.
Serving Tip
Add a touch of lemon zest just before serving for extra freshness.
Storage Tip
Keeps for up to 1 day in the fridge, best enjoyed warm.
