- —130 g vegetables of your choice (e.g., spinach, leek, broccoli, tomato)
- —1 tsp olive oil or ghee
- —Pepper, salt
Instructions
Chop the vegetables finely.
Heat the olive oil in a frying pan and sauté the vegetables for 3–4 minutes.
Whisk the eggs with pepper and salt.
Pour the egg mixture over the vegetables and let it set on low heat until the bottom turns golden brown.
Cover or flip to cook the top.
Air fryer option:
Preheat to 180 °C
Bake for 10 minutes in a small round oven dish
Serving Tip
Serve the tortilla sliced into wedges, topped with fresh herbs or a few rings of spring onion.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat in a pan on low heat or in the air fryer at 150 °C for 5 minutes.
