Vegetable Tortilla

Ingredients

  • —3 eggs
  • —130 g vegetables of your choice (e.g., spinach, leek, broccoli, tomato)
  • —1 tsp olive oil or ghee
  • —Pepper, salt

Instructions

  • Chop the vegetables finely.

  • Heat the olive oil in a frying pan and sauté the vegetables for 3–4 minutes.

  • Whisk the eggs with pepper and salt.

  • Pour the egg mixture over the vegetables and let it set on low heat until the bottom turns golden brown.

  • Cover or flip to cook the top.

Air fryer option:

  • Preheat to 180 °C

  • Bake for 10 minutes in a small round oven dish

Serving Tip

Serve the tortilla sliced into wedges, topped with fresh herbs or a few rings of spring onion.

Storage Tip

Store for up to 1 day in the refrigerator. Reheat in a pan on low heat or in the air fryer at 150 °C for 5 minutes.
