Vegetable Spaghetti Salad

Ingredients

  • – 120 g cooked green beans or lentils
  • – 1 small zucchini or carrot (spiralized into 'spaghetti')
  • – 5–6 cherry tomatoes, halved
  • – 1 tbsp pine nuts (lightly toasted, without oil)
  • – 1 tbsp olive oil
  • – Fresh basil
  • – Pepper, sea salt

Instructions

Use a spiralizer to create spaghetti-like strands from the zucchini or carrot. Combine with the green beans and cherry tomatoes in a bowl. Add the pine nuts and olive oil. Season with basil, pepper, and sea salt. Serve cold or slightly warm. (Optional: toast pine nuts for 3 minutes at 160 °C.)

Storage Tip

Store for up to 1 day in the refrigerator. Add the basil just before serving for the best flavor and color.
