- —1 egg
- —85 g potato (cooked or steamed, diced)
- —130 g vegetables (e.g., leek and broccoli or spinach)
- —1 tsp olive oil or ghee
- —Pepper, salt, nutmeg
Instructions
Cook or steam the potato cubes and vegetables briefly.
Heat the olive oil in a pan and add the vegetables and potato.
Whisk the egg with pepper and salt, then pour over the vegetables.
Cook the omelette on low heat until firm.
Fold in half and serve warm.

Serving Tip
Serve on a light plate, folded in half, with a few slices of leek or broccoli on top. Optionally, add a dollop of dressing or some fresh herbs for color, such as a spoonful of yogurt dressing or fresh parsley on top.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat in a pan on low heat with a lid on to prevent drying out.
