🥦 Vegetable Omelette with Potato and Leek

Ingredients

  • 1 egg
  • 85 g potato (cooked or steamed, diced)
  • 130 g vegetables (e.g., leek and broccoli or spinach)
  • 1 tsp olive oil or ghee
  • Pepper, salt, nutmeg

Instructions

  • Cook or steam the potato cubes and vegetables briefly.

  • Heat the olive oil in a pan and add the vegetables and potato.

  • Whisk the egg with pepper and salt, then pour over the vegetables.

  • Cook the omelette on low heat until firm.

  • Fold in half and serve warm.

Air fryer tips: 🥦 Broccoli: 6–8 min at 160 °C 🥔 Potato cubes: 12–14 min at 160 °C or 15–18 min in a steamer

Serving Tip

Serve on a light plate, folded in half, with a few slices of leek or broccoli on top. Optionally, add a dollop of dressing or some fresh herbs for color, such as a spoonful of yogurt dressing or fresh parsley on top.

Storage Tip

Store for up to 1 day in the refrigerator. Reheat in a pan on low heat with a lid on to prevent drying out.
