Veal Meatballs with Vegetables

Ingredients

  • —– 120 g veal mince
  • —– 1 small egg (optional binding agent)
  • —– 1 tbsp parsley or chives (finely chopped)
  • —– Pepper, sea salt
  • —– Pinch of nutmeg
  • —– 140 g vegetables of choice (steamed or stir-fried)
  • —– 1 tsp ghee or olive oil

Instructions

Mix the mince with the herbs and optionally the egg. Shape into small balls. Pan-fry in ghee or olive oil until golden brown, or bake in the oven at 180 °C for 20 minutes. Serve with steamed or stir-fried vegetables. Air fryer: 180 °C – 15 minutes, shake halfway through.

Serving Tip

Delicious with a spoonful of mustard or some sauerkraut on the side.

Storage Tip

Store for up to 1 day in the fridge; briefly reheat in the oven or air fryer before serving.
