Veal Meatballs with Vegetables

Ingredients
- —– 120 g veal mince
- —– 1 small egg (optional binding agent)
- —– 1 tbsp parsley or chives (finely chopped)
- —– Pepper, sea salt
- —– Pinch of nutmeg
- —– 140 g vegetables of choice (steamed or stir-fried)
- —– 1 tsp ghee or olive oil
Instructions
Mix the mince with the herbs and optionally the egg. Shape into small balls.
Pan-fry in ghee or olive oil until golden brown, or bake in the oven at 180 °C for 20 minutes.
Serve with steamed or stir-fried vegetables.
Air fryer: 180 °C – 15 minutes, shake halfway through.
Serving Tip
Delicious with a spoonful of mustard or some sauerkraut on the side.
Storage Tip
Store for up to 1 day in the fridge; briefly reheat in the oven or air fryer before serving.
