Veal Meatballs with Carrot and Olive

Ingredients

  • – 120 g veal mince
  • – 40 g grated carrot
  • – 3–4 green olives (finely chopped)
  • – 1 tbsp fresh parsley (finely chopped)
  • – 1 tbsp chives (finely chopped)
  • – ½ tsp garlic powder
  • – Pepper and sea salt to taste
  • – 1 tsp olive oil or ghee

Instructions

Mix all the ingredients thoroughly. Shape into medium-sized balls. Cook in a pan with olive oil or ghee until golden brown, or bake for 20 minutes at 180 °C in the oven. Air fryer: 180 °C – 15 minutes.

Serving Tip

Serve with a bit of sauerkraut or warm leek-carrot vegetables on the side.

Storage Tip

Store in the fridge for up to 1 day and reheat briefly in the oven or air fryer.
