Turkey Stew with Winter Vegetables

Ingredients

  • —300 g turkey breast, diced
  • —2 teaspoons olive oil
  • —1 small onion, finely chopped
  • —1 clove garlic, finely chopped
  • —1 winter carrot, sliced into half-moons
  • —1 small parsnip, diced
  • —120 g runner beans or green beans, chopped
  • —200 ml light vegetable broth (unsweetened)
  • —1 teaspoon thyme
  • —1 teaspoon rosemary
  • —1 teaspoon lemon zest
  • —Pepper and sea salt to taste

Instructions

- Heat olive oil and lightly brown the turkey pieces.

- Add onion and garlic, cooking for 2 minutes.

- Stir in the carrot and parsnip.

- Add the broth, thyme, rosemary, lemon zest, pepper, and salt.

- Let it simmer gently for 12–15 minutes.

- Add the beans and cook for another 3 minutes.

- Serve warm in two bowls.

Serve the stew in deep bowls with a sprinkle of extra lemon zest and thyme on top. Warm, tender, and aromatic — the perfect comfort bowl without being heavy.
