Turkey Stew with Winter Vegetables

Ingredients
- —300 g turkey breast, diced
- —2 teaspoons olive oil
- —1 small onion, finely chopped
- —1 clove garlic, finely chopped
- —1 winter carrot, sliced into half-moons
- —1 small parsnip, diced
- —120 g runner beans or green beans, chopped
- —200 ml light vegetable broth (unsweetened)
- —1 teaspoon thyme
- —1 teaspoon rosemary
- —1 teaspoon lemon zest
- —Pepper and sea salt to taste
Instructions
- Heat olive oil and lightly brown the turkey pieces.
- Add onion and garlic, cooking for 2 minutes.
- Stir in the carrot and parsnip.
- Add the broth, thyme, rosemary, lemon zest, pepper, and salt.
- Let it simmer gently for 12–15 minutes.
- Add the beans and cook for another 3 minutes.
- Serve warm in two bowls.
