Turkey Ragout (Light Version)

Ingredients

  • —300 g turkey breast, diced
  • —2 teaspoons olive oil
  • —1 small shallot, finely chopped
  • —1 clove garlic, finely chopped
  • —1 carrot, diced
  • —1 small leek, sliced into rings
  • —200 ml light vegetable broth (unsweetened)
  • —2 tablespoons goat cream cheese or yogurt
  • —1 teaspoon mustard
  • —1 teaspoon lemon zest
  • —Pepper and sea salt to taste
  • —Optional: fresh parsley or thyme

Instructions

- Lightly brown the turkey pieces in olive oil.

- Add the shallot and garlic, and sauté gently.

- Stir in the carrot and leek.

- Pour in the broth and let simmer for 8–10 minutes.

- Mix in the goat cream cheese or yogurt and mustard.

- Season with lemon zest, pepper, and salt.

- Let it simmer gently for 2 minutes and serve warm.

Serving Tip

Serve the ragout in deep bowls with a sprinkle of fresh parsley. Warm, soft, and aromatic — the perfect comfort bowl without being heavy.

Storage Tip

Keeps for up to 2 days in the fridge; the sauce often becomes creamier the next day.
