Turkey Ragout (Light Version)

Ingredients
- —300 g turkey breast, diced
- —2 teaspoons olive oil
- —1 small shallot, finely chopped
- —1 clove garlic, finely chopped
- —1 carrot, diced
- —1 small leek, sliced into rings
- —200 ml light vegetable broth (unsweetened)
- —2 tablespoons goat cream cheese or yogurt
- —1 teaspoon mustard
- —1 teaspoon lemon zest
- —Pepper and sea salt to taste
- —Optional: fresh parsley or thyme
Instructions
- Lightly brown the turkey pieces in olive oil.
- Add the shallot and garlic, and sauté gently.
- Stir in the carrot and leek.
- Pour in the broth and let simmer for 8–10 minutes.
- Mix in the goat cream cheese or yogurt and mustard.
- Season with lemon zest, pepper, and salt.
- Let it simmer gently for 2 minutes and serve warm.
