Turkey Meatballs in Spiced Tomato Sauce

Ingredients
- —300 g turkey breast or ground turkey
- —1 teaspoon mustard
- —1 small shallot, finely chopped
- —1 clove garlic, finely chopped
- —1 teaspoon lemon zest
- —1 tablespoon finely chopped parsley
- —Pepper and sea salt to taste
- —2 teaspoons olive oil
- —200 g diced tomatoes (unsweetened)
- —1 teaspoon Italian herbs
- —A pinch of chili flakes
- —1 teaspoon balsamic vinegar or lemon juice
Instructions
- Mix the turkey with mustard, shallot, garlic, lemon zest, parsley, pepper, and salt.
- Shape into small meatballs.
- Lightly brown the meatballs all around in olive oil.
- Add diced tomatoes, herbs, chili flakes, and balsamic vinegar.
- Let simmer gently for 10–12 minutes.
- Serve warm with extra parsley.
