Tomato Soup with Meatballs

Ingredients

  • —400 g tomatoes, chopped
  • —1 small onion, finely chopped
  • —1 clove of garlic, finely chopped
  • —500 ml water or low-sodium broth
  • —150 g lean ground beef
  • —Salt and pepper
  • —1 teaspoon oregano or thyme
  • —Optional: pinch of paprika powder

Instructions

  • Mix the ground beef with salt, pepper, and optionally paprika powder, and roll into small meatballs.

  • Sauté the onion and garlic briefly in a small splash of water.

  • Add the tomatoes and cook for 2 minutes.

  • Pour in the water or broth and bring to a boil.

  • Simmer gently for 10 minutes and blend the soup until smooth.

  • Season with salt, pepper, and oregano or thyme.

  • Let the meatballs gently cook in the soup for 8–10 minutes.

  • Serve immediately.

Serving Tip

Serve immediately, optionally with extra oregano. A soft, flavorful tomato soup with small, tender meatballs — simple, light, and warming.

Storage Tip

Keeps for up to 2 days in the fridge. The meatballs are often even more tender the next day.
