
Ingredients
- —400 g tomatoes, chopped
- —1 small onion, finely chopped
- —1 clove of garlic, finely chopped
- —500 ml water or low-sodium broth
- —150 g lean ground beef
- —Salt and pepper
- —1 teaspoon oregano or thyme
- —Optional: pinch of paprika powder
Instructions
Mix the ground beef with salt, pepper, and optionally paprika powder, and roll into small meatballs.
Sauté the onion and garlic briefly in a small splash of water.
Add the tomatoes and cook for 2 minutes.
Pour in the water or broth and bring to a boil.
Simmer gently for 10 minutes and blend the soup until smooth.
Season with salt, pepper, and oregano or thyme.
Let the meatballs gently cook in the soup for 8–10 minutes.
Serve immediately.

Keeps for up to 2 days in the fridge. The meatballs are often even more tender the next day.
