Tomato Salad with Red Onion and Artichoke

Ingredients

  • 4 ripe tomatoes
  • 0.5 red onion
  • 2 tbsp artichoke hearts
  • 1 tbsp capers
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh oregano
  • pinch of salt
  • pinch of pepper

Instructions

  • Slice the tomatoes thinly and arrange them overlapping on a platter.

  • Cut the red onion into very thin rings and scatter them over the tomatoes.

  • Sprinkle the pieces of artichoke heart and capers on top.

  • Mix the olive oil with red wine vinegar, salt, and pepper to make a light dressing and drizzle it over the salad.

  • Finish with fresh oregano or basil and serve immediately.
