
Cucumber Bites with Herbed Goat Cheese and Sun-Dried Tomato
Ingredients
- —1 cucumber
- —150 g herbed goat cheese
- —10 sun-dried tomatoes
- —10 g fresh basil
- —black pepper
Instructions
Wash the cucumber and cut it in half lengthwise.
Remove the seeds using a spoon.
Pat the inside dry thoroughly.
Shave a thin strip off the bottom so the cucumber sits stable.
Fill the hollow with herbed goat cheese and smooth the top.
Wrap in plastic wrap and refrigerate until ready to use.
Slice the filled cucumber into pieces about 1 to 1.5 cm thick.
Place a basil leaf on each piece.
Top with a piece of sun-dried tomato.
Secure with a cocktail stick.
Grind some black pepper over the bites just before serving.
