Tomato Salad with Mozzarella

Ingredients

  • 1 large ripe tomato (sliced)
  • 100 g mozzarella or 60 g goat cheese
  • 1 handful of mixed greens or lamb's lettuce
  • 1 tbsp olive oil or 1 tsp green pesto

  • Pepper, sea salt
  • (optional) a few olives or a piece of pickled cucumber

Instructions

Arrange the tomato and cheese slices alternately on a plate, with the greens underneath or alongside. Drizzle with olive oil or pesto. Sprinkle with basil, pepper, and sea salt. Optionally, garnish with olives or pickled cucumber for extra freshness.
