
Tomato Rice with Chicken
Ingredients
- —250 g quick-cooking rice
- —400 g chicken breast
- —1 red onion
- —1 can diced tomatoes (400 g)
- —0.5 chicken bouillon cube
- —150 g white cheese cubes
- —1 cucumber
- —1 pinch paprika powder
- —1 pinch oregano
- —2 tablespoons oil or butter
- —300 ml water
Instructions
Dissolve the half bouillon cube in 300 ml of hot water.
Finely chop the red onion.
Heat oil or butter in a large pan.
Sauté the onion until translucent.
Add the diced chicken and cook until browned on all sides.
Season with paprika powder and oregano.
Add the rice and stir briefly.
Pour in the diced tomatoes and bouillon.
Let it simmer gently for 15 minutes.
Stir occasionally and add extra liquid if needed.
Meanwhile, dice the cucumber.
Serve with crumbled white cheese and cucumber.
