Tomato Rice with Chicken

Ingredients

  • —250 g quick-cooking rice
  • —400 g chicken breast
  • —1 red onion
  • —1 can diced tomatoes (400 g)
  • —0.5 chicken bouillon cube
  • —150 g white cheese cubes
  • —1 cucumber
  • —1 pinch paprika powder
  • —1 pinch oregano
  • —2 tablespoons oil or butter
  • —300 ml water

Instructions

  • Dissolve the half bouillon cube in 300 ml of hot water.

  • Finely chop the red onion.

  • Heat oil or butter in a large pan.

  • SautĂ© the onion until translucent.

  • Add the diced chicken and cook until browned on all sides.

  • Season with paprika powder and oregano.

  • Add the rice and stir briefly.

  • Pour in the diced tomatoes and bouillon.

  • Let it simmer gently for 15 minutes.

  • Stir occasionally and add extra liquid if needed.

  • Meanwhile, dice the cucumber.

  • Serve with crumbled white cheese and cucumber.
