Ingredients

  • 160 g salmon fillet, finely chopped
  • 1 spring onion, finely sliced
  • 1 small clove of garlic, finely chopped
  • 1 tablespoon coriander, finely chopped
  • 1 teaspoon lemon zest
  • 1/2 teaspoon chili flakes or fresh chili
  • 1 tablespoon yogurt (full-fat, goat, or sheep yogurt)
  • 1 teaspoon olive oil (for frying)
  • 1 baby cucumber, thinly sliced
  • A handful of romaine lettuce or sliced green beans
  • Pepper and sea salt to taste

Instructions

- Combine the finely chopped salmon with spring onion, garlic, coriander, lemon zest, chili, yogurt, pepper, and salt.

- Shape the mixture into small, flat patties.

- Heat the olive oil in a pan over medium heat.

- Fry the salmon patties for 2–3 minutes on each side until golden and firm.

- Let them cool briefly to ensure they stay firm in the to-go box.

- Place romaine lettuce or sliced green beans at the bottom of a to-go container.

- Arrange the salmon patties on top.

- Add the cucumber slices for freshness just before serving.

Serving Tip

Keep the cucumber separate in a small container to ensure everything stays fresh and crisp during transport.

Storage Tip

Keeps for up to 1 day; store cucumber and dressing separately.
