
Teriyaki Salmon with Green Beans and Fresh Sweet-Sour Salad

Ingredients
- —160 g salmon fillet
- —150 g green beans, sliced diagonally
- —1 small romaine lettuce, roughly chopped
- —1 baby cucumber, thinly sliced
- —1 spring onion, sliced into rings
- —Handful of cilantro
- —1 teaspoon olive oil
- —1 tablespoon soy sauce
- —1 teaspoon lemon or lime juice
- —1 teaspoon vinegar (e.g., rice vinegar)
- —Pepper and sea salt to taste
Instructions
- Mix soy sauce, lemon or lime juice, and vinegar to create a light teriyaki sauce.
- Heat the olive oil in a pan and cook the salmon over medium heat for 2–3 minutes on each side.
- Halfway through cooking, spoon some teriyaki sauce over the salmon to give it a glossy finish.
- Boil or stir-fry the green beans for 3–4 minutes until tender-crisp.
- Combine romaine lettuce, baby cucumber, spring onion, and cilantro in a bowl.
- Lightly dress the salad with a bit of the remaining sauce.
- Serve the salmon with the warm green beans and the fresh salad on the side.
Serving Tip
Drizzle extra sauce over the salmon and arrange the salad partially under the fish for a fresh, modern presentation.
