Stir-Fried Chicory with Veal Strips and Leek

Ingredients
- —250 g veal strips
- —3 heads of chicory, thinly sliced
- —½ leek, sliced into rings
- —2 tsp olive oil or ghee
- —Pepper, salt, nutmeg
Instructions
Heat the oil in a large pan or wok.
Briefly sear the veal strips until golden brown, then remove them from the pan.
Add the chicory and leek, stir-frying for 5–6 minutes until softened.
Season with pepper, salt, and nutmeg.
Return the meat to the pan and heat everything for another minute.
Serving Tip
Delicious with a few drops of lemon juice or a spoonful of mustard dressing from the sauces chapter. Serve on a dark plate to highlight the light colors of the chicory and leek. Arrange the veal strips on top and garnish with a bit of fresh parsley or dill.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat briefly in a covered pan or in the air fryer at 150 °C.
