Steak Tartare with Herbs and Crispy Bread

Ingredients

  • 200 g high-quality beef
  • 1 tsp mustard
  • 1 tbsp olive oil
  • 1 tbsp capers
  • 1 small shallot
  • 1 slice sourdough bread
  • fresh herbs
  • microgreens
  • pepper
  • salt

Instructions

  • Finely chop the beef with a sharp knife.

  • Gently mix the beef with olive oil, mustard, and capers.

  • Season with pepper and salt to taste.

  • Finely chop the shallot and briefly mix it into the beef.

  • Use a ring mold to neatly shape the tartare on a plate.

  • Scatter small pieces of crispy bread over the tartare.

  • Garnish with fresh herbs, microgreens, and a few drops of olive oil.

  • Serve immediately, fresh and chilled.
