Spinach Salad with Strawberry, Feta, and Mint

Ingredients
- —75 g fresh spinach
- —150 g strawberries
- —50 g feta
- —0.25 red onion
- —10 g fresh mint
- —15 g almond flakes
- —1 tbsp lemon juice
- —1 tbsp balsamic vinegar
- —pinch of salt
- —pinch of black pepper
Instructions
Wash the spinach and let it drain well.
Cut the strawberries into wedges and the red onion into thin half rings.
Roughly chop the mint and mix it together with the spinach, strawberries, and onion in a bowl.
Crumble the feta over the top.
Toast the almond flakes briefly in a dry pan until golden brown and add to the salad.
Mix lemon juice with balsamic vinegar, salt, and pepper, and drizzle over the salad.
Toss gently until everything is lightly coated.

Serve this salad lightly chilled for a refreshing and elegant lunch.
