Spicy Chicken Soup with Sweet Potato and Corn

Ingredients
- —120 g pulled chicken
- —150 g sweet potato
- —50 g corn
- —100 g passata
- —1/2 onion
- —350 ml water
- —1/4 vegetable bouillon cube
- —1/2 tsp Mexican spices
- —1/2 tsp smoked paprika
- —1 tsp white wine vinegar
- —5 g fresh cilantro
- —pepper to taste
Instructions
Bring water with the vegetable bouillon cube to a boil.
Add the sweet potato and onion, and cook for about 10 minutes until they soften.
Add the pulled chicken and passata.
Stir in the Mexican spices and smoked paprika.
Let simmer for about 5 minutes to blend the flavors.
Add the corn and heat briefly.
Season with pepper and white wine vinegar, and garnish with fresh cilantro.
A warm, spicy soup where tender chicken meets sweet potato, tomato, and fresh cilantro. The spices add depth while the vegetables keep the dish light and nourishing.
