Ingredients

  • 160g ground chicken (lean)
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1 small clove of garlic, finely chopped
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 70g yogurt (full-fat, goat, or sheep yogurt)
  • 1 handful of parsley
  • 1 handful of mint
  • 1 teaspoon lemon zest

Instructions

  • Mix the ground chicken with paprika, turmeric, cumin, garlic, pepper, and a pinch of salt.

  • Shape the mixture into small meatballs. Heat the olive oil in a pan and cook the meatballs until browned and cooked through.

  • Prepare the green salsa by blending parsley, mint, lemon zest, and a splash of water into a thin green sauce.

  • Spoon some yogurt onto a plate and spread it into a soft 'swipe'.

  • Place the warm meatballs on top and drizzle the green salsa alongside.

Serving Tip

Serve the meatballs close together on the yogurt. It will look like a high-end dish without taking much time.

Storage Tip

The meatballs keep for 1 day; add the yogurt and salsa fresh at the table.
