Spiced White Fish with Mediterranean Vegetables

Ingredients

  • 2 white fish fillets (approx. 150 g each)
  • 1 tsp olive oil or ghee
  • 1 clove garlic, finely chopped
  • 1 tsp lemon juice
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp dill
  • ½ tsp oregano
  • Pepper, salt
  • For the side (vegetable options):
  • 1 zucchini, sliced into half-moons
  • 1 red bell pepper, sliced into strips
  • 1 small tomato, chopped
  • (optional) ½ red chili, finely chopped

Instructions

  • Preheat the oven to 180 °C (or use a pan).

  • Mix the olive oil with all the spices, garlic, and lemon juice to create a fragrant marinade.

  • Place the fish in an oven dish, brush with the marinade, and arrange the vegetables around it.

  • Bake for 15–18 minutes until the fish is tender and juicy. (If using a pan: cook the fish for 3–4 minutes on each side, stir-fry the vegetables separately.)

  • Drizzle some extra lemon juice or herb oil over the dish before serving.
