- —2 white fish fillets (approx. 150 g each)
- —1 tsp olive oil or ghee
- —1 clove garlic, finely chopped
- —1 tsp lemon juice
- —1 tsp paprika
- —½ tsp cumin
- —½ tsp turmeric
- —½ tsp dill
- —½ tsp oregano
- —Pepper, salt
- —For the side (vegetable options):
- —1 zucchini, sliced into half-moons
- —1 red bell pepper, sliced into strips
- —1 small tomato, chopped
- —(optional) ½ red chili, finely chopped
Instructions
Preheat the oven to 180 °C (or use a pan).
Mix the olive oil with all the spices, garlic, and lemon juice to create a fragrant marinade.
Place the fish in an oven dish, brush with the marinade, and arrange the vegetables around it.
Bake for 15–18 minutes until the fish is tender and juicy. (If using a pan: cook the fish for 3–4 minutes on each side, stir-fry the vegetables separately.)
Drizzle some extra lemon juice or herb oil over the dish before serving.
