
Ingredients
- —80g red lentils
- —200g carrot, halved slices
- —100g leek, sliced into rings
- —1 teaspoon ground cumin
- —1 teaspoon turmeric
- —1 clove garlic, finely chopped
- —Salt and pepper to taste
- —250ml water
Instructions
Rinse the red lentils. Heat a pan and add the leek and carrot with a splash of water. Stir in the garlic, cumin, and turmeric, and sauté briefly. Add the water and lentils, then simmer gently for 12–15 minutes until a thick stew forms. Season with salt and pepper to taste.
Serving Tip
Serve with fresh parsley or a few lemon wedges.

Keeps for up to 2 days in the refrigerator.
