Shrimp Skewers with Mango-Cucumber Salsa

Ingredients

  • 16 shrimp, peeled and cleaned
  • 2 cloves of garlic
  • 1 tsp paprika powder
  • 2 tbsp olive oil
  • 1 mango
  • 0.5 cucumber
  • 1 passion fruit
  • 1 lime, juice and zest
  • 1 red onion
  • 2 tbsp flat-leaf parsley
  • 2 spring onions
  • 1 chili pepper
  • pepper
  • salt

Instructions

  • Mix the shrimp with olive oil, paprika powder, and pressed garlic.

  • Cover and let marinate in the refrigerator for 30 minutes.

  • Peel the mango and cut the flesh into small cubes.

  • Finely chop the cucumber, red onion, spring onion, and chili pepper.

  • Scoop out the flesh of the passion fruit.

  • Combine the mango, cucumber, red onion, spring onion, chili, passion fruit, lime juice, and zest.

  • Mix in the chopped parsley.

  • Thread the shrimp onto skewers, two per skewer.

  • Quickly sear the skewers in a hot pan with oil until just cooked through.

  • Serve immediately with the refreshing mango-cucumber salsa.
