
Ingredients
- —16 shrimp, peeled and cleaned
- —2 cloves of garlic
- —1 tsp paprika powder
- —2 tbsp olive oil
- —1 mango
- —0.5 cucumber
- —1 passion fruit
- —1 lime, juice and zest
- —1 red onion
- —2 tbsp flat-leaf parsley
- —2 spring onions
- —1 chili pepper
- —pepper
- —salt
Instructions
Mix the shrimp with olive oil, paprika powder, and pressed garlic.
Cover and let marinate in the refrigerator for 30 minutes.
Peel the mango and cut the flesh into small cubes.
Finely chop the cucumber, red onion, spring onion, and chili pepper.
Scoop out the flesh of the passion fruit.
Combine the mango, cucumber, red onion, spring onion, chili, passion fruit, lime juice, and zest.
Mix in the chopped parsley.
Thread the shrimp onto skewers, two per skewer.
Quickly sear the skewers in a hot pan with oil until just cooked through.
Serve immediately with the refreshing mango-cucumber salsa.
