Shrimp Cocktail (Light Version)

Ingredients

  • 120 g Dutch shrimp
  • 1 small romaine lettuce or butter lettuce, finely chopped
  • 1/4 cucumber, diced
  • 1 tablespoon chives or dill, finely chopped
  • 70 g yogurt (full-fat, goat, or sheep yogurt)
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon mild paprika powder
  • Pepper and sea salt to taste

Instructions

- Mix the yogurt, lemon juice, lemon zest, paprika powder, pepper, and salt into a refreshing dressing.

- Spread the finely chopped romaine lettuce over a glass or small plate.

- Combine the shrimp with half of the dressing.

- Place the shrimp on the lettuce and scatter the cucumber cubes alongside.

- Drizzle the remaining dressing lightly over the top.

- Garnish with dill or chives.
