Ingredients

  • 2 rye crackers, finely crumbled
  • 150g spinach, roughly chopped
  • 60g cooked chickpeas, mashed
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 1 tablespoon water (if needed)

Instructions

  • Preheat the oven to 180°C (350°F).

  • Crumble the rye crackers into fine crumbs.

  • Roughly chop the spinach.

  • Mash the chickpeas into a smooth puree.

  • Combine the crackers, spinach, chickpeas, lemon zest, salt, and pepper in a bowl.

  • Add 1 tablespoon of water if the mixture feels too dry.

  • Press the mixture firmly into small round molds or a mini baking dish.

  • Bake for 12–15 minutes until lightly firm and warmed through.

  • Serve immediately as a savory breakfast tartlet.

Serving Tip

Delicious with extra lemon zest on top for freshness.

Storage Tip

Keeps for up to 1 day in the fridge, but tastes best warm.
