Ingredients

  • —120 g red lentils
  • —125 ml water
  • —1 teaspoon olive oil
  • —Spices of your choice: curry, cardamom, cinnamon, or garam masala
  • —Sea salt and black pepper
  • —Vegetable topping of your choice: carrot, mushrooms, apple

Instructions

  • Rinse the lentils thoroughly.

  • Blend them with the water into a smooth, thin batter.

  • Mix the spices, pepper, and salt into the batter.

  • Heat a small amount of olive oil in a pan.

  • Pour a thin layer of batter into the pan.

  • Cook the pancake for 2–3 minutes on each side until golden and firm.

  • Serve with your chosen topping.
