Salmon-Cucumber To-Go Cup

Ingredients

  • 120g cold salmon (steamed or leftover), in tender pieces
  • 1/2 cucumber, diced small
  • 70g yogurt (full-fat, goat or sheep yogurt)
  • 1 teaspoon lemon zest
  • 1 teaspoon dill, finely chopped
  • Salt and pepper to taste

Instructions

  • Dice the cucumber into small pieces.

  • Mix the yogurt with lemon zest, dill, pepper, and a pinch of salt.

  • Fold the cucumber pieces into the yogurt mixture until lightly coated.

  • Place the salmon pieces on top, keeping them intact.

  • Pack everything into a small container with a lid.

  • Keep refrigerated until you're ready to go — it stays fresh and firm.

  • No cucumber at home? Use finely diced celery or thinly sliced radishes for the same crispness.
