Rye Bread Sandwich with Tomato Tapenade and Goat Cheese Spread

Ingredients

  • 4 slices of rye bread or rye crispbread
  • 80 g soft goat cheese
  • 1 teaspoon lemon juice
  • 1 tablespoon finely chopped basil or thyme
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons tomato tapenade (sugar-free)
  • Pepper and sea salt to taste
  • Optional: arugula or lamb's lettuce

Instructions

  • Mix the goat cheese with lemon juice, herbs, olive oil, pepper, and salt into a creamy spread.

  • Spread tomato tapenade on two slices of rye bread.

  • Spread the goat cheese mixture on the other two slices.

  • Place the slices together and press lightly.

  • Cut the sandwiches diagonally and optionally add arugula or lamb's lettuce.

Serving Tip

A fresh, Mediterranean sandwich with a creamy goat cheese spread and flavorful tomato tapenade — simple yet full of character. Serve on a wooden board with a small dish of extra tapenade and fresh basil leaves.
