Ingredients

  • 350 g Brussels sprouts, cleaned and halved
  • 2 teaspoons olive oil
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 small red onion, thinly sliced
  • 1 tablespoon fresh parsley or thyme, finely chopped
  • 1 handful of roasted nuts (almonds or pecans), roughly chopped
  • Pepper and sea salt to taste

Instructions

- Preheat the oven to 200°C (400°F).

- Toss the Brussels sprouts with olive oil, lemon zest, lemon juice, onion, pepper, and salt.

- Spread them out on a baking sheet.

- Roast for 18–20 minutes until golden and tender.

- Mix with fresh herbs.

- Garnish with nuts.

Serving Tip

Serve the Brussels sprouts warm with a touch of lemon on top. Warm, fresh, and surprisingly tender — these might just become a new favorite.
