Ingredients
- —350 g Brussels sprouts, cleaned and halved
- —2 teaspoons olive oil
- —1 teaspoon lemon zest
- —1 tablespoon lemon juice
- —1 small red onion, thinly sliced
- —1 tablespoon fresh parsley or thyme, finely chopped
- —1 handful of roasted nuts (almonds or pecans), roughly chopped
- —Pepper and sea salt to taste
Instructions
- Preheat the oven to 200°C (400°F).
- Toss the Brussels sprouts with olive oil, lemon zest, lemon juice, onion, pepper, and salt.
- Spread them out on a baking sheet.
- Roast for 18–20 minutes until golden and tender.
- Mix with fresh herbs.
- Garnish with nuts.
