Roasted Beet with Goat Cheese

Ingredients

  • —4 medium red beets
  • —100 g soft goat cheese
  • —1 tbsp olive oil
  • —1 tsp honey
  • —1 tsp fresh thyme
  • —pinch of salt
  • —pinch of pepper

Instructions

  • Preheat the oven to 200°C (392°F). Wash the red beets and pat them dry.

  • Place each beet on a piece of aluminum foil, drizzle with olive oil, salt, and pepper, and wrap them into packets.

  • Roast the beets in the oven for about 40 to 45 minutes until they are tender.

  • Remove from the oven, cut a cross on top, and gently open the beet. Fill with soft goat cheese, drizzle with honey, and sprinkle with fresh thyme. Return to the oven for about 5 more minutes to allow the cheese to slightly melt.

A warm dish where the earthy sweetness of beet beautifully complements the creamy goat cheese and fragrant thyme. Simple from the oven, yet with a deep, rich flavor.

Serve the warm beet straight from the oven so the creamy goat cheese can beautifully melt into the soft beet.
