Roasted Asparagus with Radish and Tarragon Vinaigrette

Ingredients
- —200 g green asparagus
- —100 g radishes
- —1 tsp mustard
- —1 tbsp vinegar
- —5 g fresh tarragon
- —pinch of salt
- —pinch of black pepper
Instructions
An elegant and light dish where roasted asparagus and radishes come together with a fresh, herby vinaigrette.
Preheat the oven to 200 °C
Remove the woody ends of the asparagus
Halve the radishes
Place asparagus and radishes on a baking sheet
Roast for 15 minutes until tender and lightly colored
Mix mustard with vinegar, salt, and pepper
Chop the tarragon finely and stir into the dressing
Remove the vegetables from the oven and place on a platter
Drizzle the vinaigrette over and toss lightly
Serving Tip
Serve this dish warm in a light spring setting for a refined presentation.
