Roasted Asparagus with Radish and Tarragon Vinaigrette

Ingredients

  • 200 g green asparagus
  • 100 g radishes
  • 1 tsp mustard
  • 1 tbsp vinegar
  • 5 g fresh tarragon
  • pinch of salt
  • pinch of black pepper

Instructions

An elegant and light dish where roasted asparagus and radishes come together with a fresh, herby vinaigrette.

  • Preheat the oven to 200 °C

  • Remove the woody ends of the asparagus

  • Halve the radishes

  • Place asparagus and radishes on a baking sheet

  • Roast for 15 minutes until tender and lightly colored

  • Mix mustard with vinegar, salt, and pepper

  • Chop the tarragon finely and stir into the dressing

  • Remove the vegetables from the oven and place on a platter

  • Drizzle the vinaigrette over and toss lightly

Serving Tip

Serve this dish warm in a light spring setting for a refined presentation.

Storage Tip

Store covered in the refrigerator for up to 1 day and serve preferably at room temperature.
