  • —500 g green asparagus
  • —1 ball of burrata (150 g)
  • —1 tbsp olive oil
  • —0.5 tsp paprika powder
  • —0.5 tsp garlic powder
  • —0.5 lemon, zest
  • —30 g pine nuts
  • —1 tsp truffle honey
  • —fresh basil
  • —garden cress
  • —chili flakes
  • —pepper
  • —salt

Instructions

  • Preheat the oven to 200 °C (390 °F).

  • Trim 1 to 2 cm off the ends of the asparagus.

  • Place the asparagus in a baking dish.

  • Toss with olive oil, paprika powder, garlic powder, lemon zest, pepper, and salt.

  • Roast the asparagus in the oven for 15 minutes until tender-crisp.

  • Meanwhile, toast the pine nuts in a dry pan until golden brown.

  • Let the asparagus cool slightly.

  • Place the burrata on a serving plate.

  • Arrange the asparagus over the burrata.
