Pork Roast with Rosemary, Garlic, and Lemon

Ingredients

  • —500 g pork roast, rolled and tied
  • —2 teaspoons olive oil
  • —2 cloves garlic, finely chopped
  • —1 teaspoon lemon zest
  • —1 tablespoon lemon juice
  • —1 teaspoon rosemary, finely chopped
  • —1 teaspoon thyme
  • —Pepper and sea salt to taste

Instructions

- Preheat the oven to 180°C (350°F).

- Rub the roast with olive oil, garlic, lemon zest, lemon juice, rosemary, thyme, pepper, and salt.

- Place in a baking dish and roast for 45–55 minutes.

- Baste halfway through cooking.

- Let rest under foil for 10 minutes.

- Slice into beautiful pieces and serve warm.

Serving Tip

Serve the roast in thin slices with some of the warm lemon-herb juices drizzled over. Soft, fragrant, and classic — a light roast with fresh lemon and warming herbs.

Storage Tip

Keeps for up to 2 days in the refrigerator; also delicious cold in thin slices.
