Ingredients

  • 1 egg
  • 1 slice of rye toast or lightly toasted rye bread
  • 1/2 avocado, sliced
  • 1 teaspoon lemon juice
  • Pepper and salt
  • Fresh herbs like chives or parsley

Instructions

  • Bring a pot of water to just below boiling point.

  • Crack the egg into a cup and gently slide it into the water.

  • Poach the egg for 3–4 minutes until the white is firm and the yolk is soft.

  • Lightly toast the rye bread.

  • Top the toast with avocado slices, lemon juice, pepper, and salt.

  • Place the poached egg on top.

  • Finish with fresh herbs.

  • Serve immediately.
