Ingredients
- —1 tbsp peanut butter (100% peanuts, no sugar or oil)
- —2 tbsp water
- —1 tsp lemon juice
- —½ tsp tamari or soy sauce (sugar-free, optional)
- —Pepper, chili powder to taste
Instructions
Warm the water in a small saucepan (do not boil).
Add the peanut butter and gently stir with a whisk until smooth.
Add lemon juice, pepper, and optionally tamari or chili powder.
Let it simmer briefly (1–2 minutes) until the sauce thickens slightly.
Serving Tip
Delicious served warm over chicken, cauliflower rice, green beans, or a vegetarian burger. Serve in a small bowl or drizzle over the dish in thin stripes. Garnish with a few peanuts or a pinch of chili flakes.
Storage Tip
Allow the sauce to cool completely first. Store for up to 2 days in a sealed jar in the refrigerator. When reheating: stir in a small splash of water and gently warm in a saucepan to make the sauce smooth and creamy again.
