Instructions
Mix ponzu, mirin, sesame oil, and lime juice into a refreshing dressing.
Shuck the oysters just before serving.
Spoon a little dressing into each oyster.
Garnish with cucumber, small pieces of persimmon, flower petals, and sesame seeds.
Serve immediately, well-chilled.
