- —2 pieces of salmon
- —1 large sweet potato
- —100 g green asparagus or broccolini
- —250 g cherry tomatoes
- —1 small red onion
- —2 tablespoons oil
- —1 pinch of salt
- —Lemon pepper or black pepper with lemon zest
Instructions
Preheat the oven to 200 °C (392 °F).
Peel the sweet potato if desired and cut into 2-3 cm cubes.
Place the sweet potato in a baking dish.
Drizzle with oil and sprinkle with a pinch of salt.
Bake the sweet potato in the oven for 10 minutes.
Add the cherry tomatoes, asparagus or broccolini, and red onion to a bowl.
Toss with a bit of oil and salt.
Season the salmon with lemon pepper or pepper and lemon zest.
Remove the baking dish from the oven and add the vegetables.
Gently stir everything together.
Place the salmon among the vegetables.
Return the dish to the oven for another 12 minutes.
Remove when the salmon is just pink in the center.
