Omelet-Yogurt Rolls To-Go

Ingredients

  • 2 eggs
  • 80g yogurt (full-fat, goat, or sheep yogurt)
  • 1 handful of spinach, finely chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Splash of water for cooking

Instructions

  • Whisk the eggs with salt and pepper.

  • Heat a pan with a small splash of water.

  • Pour the egg mixture into the pan and cook a very thin omelet.

  • Let the omelet cool completely on a plate.

  • Mix the yogurt with spinach and lemon zest.

  • Spread the cooled omelet with the yogurt mixture.

  • Roll the omelet tightly and cut into 4–5 sturdy rolls.

  • Place the rolls in a tupperware container for on-the-go.

Serving Tip

Also delicious with a bit of extra lemon zest or fresh herbs.

Storage Tip

Keeps firm for 24 hours in a sealed container.
