
Ingredients
- —2 eggs
- —80g yogurt (full-fat, goat, or sheep yogurt)
- —1 handful of spinach, finely chopped
- —1 teaspoon lemon zest
- —Salt and pepper to taste
- —Splash of water for cooking
Instructions
Whisk the eggs with salt and pepper.
Heat a pan with a small splash of water.
Pour the egg mixture into the pan and cook a very thin omelet.
Let the omelet cool completely on a plate.
Mix the yogurt with spinach and lemon zest.
Spread the cooled omelet with the yogurt mixture.
Roll the omelet tightly and cut into 4–5 sturdy rolls.
Place the rolls in a tupperware container for on-the-go.
Serving Tip
Also delicious with a bit of extra lemon zest or fresh herbs.
Storage Tip
Keeps firm for 24 hours in a sealed container.
