Niçoise Salad with Tuna and Artichoke

Ingredients

  • 100 g tuna in water
  • 1 egg
  • 100 g mixed greens
  • 100 g cucumber
  • 75 g radish
  • 1 tomato
  • 120 g artichoke hearts
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • pinch of salt
  • pinch of black pepper

Instructions

A classic, hearty salad with tuna and vegetables, enhanced with artichoke hearts for a gentle, Mediterranean twist.

  • Bring a pot of water to a boil

  • Boil the egg for 8 minutes until hard and let it cool

  • Slice the cucumber into half-moons

  • Slice the radishes thinly

  • Halve the tomato

  • Drain the artichoke hearts and halve if necessary

  • Drain the tuna

  • Mix greens, cucumber, radish, and tomato in a bowl

  • Top with tuna and artichoke hearts

  • Peel the egg, cut into wedges, and place on top

  • Mix lemon juice with mustard, salt, and pepper

  • Drizzle the dressing over the salad and toss lightly

Serve this salad lightly chilled for a fresh and balanced meal.

Store covered in the refrigerator for up to 1 day, adding the dressing just before serving.
